Silver Ore is not directly dropped by Enemies.
Guide
Teleport to Weeping Cavern's bonsai. Once there, head Northeast until you reach the Silver Deposits. There is another area for Silver Deposits near the back of the cavern.
Be prepared, as you will encounter Insurgents, Aeroblooms and Blastil on the path.
